All of this is gravy.

First, here’s some tips for an amazing, GF gravy.

1 can of white beans

1 package of dried porcini mushrooms, broken into smaller pieces

1 cup of vegetable broth (You may use more if it looks too thick.)

1 shallot chopped fine

4 cloves of garlic

1 Tbsp of olive oil

2 Tbsp of tamari

1 Tbsp of Nutritional Yeast

1-2 Tbsp of coarse ground black pepper (depends on your preference. I like a very peppery gravy.

1/2 Tbsp dried thyme

1/2 Tbsp sage (You can use dried, rubbed sage, or coarsely chopped fresh sage)

Heat the oil in a sauce pan.

Add the Shallots and sauté for a few minutes.

Add the garlic and dried mushrooms. Sauté until fragrant.

Add the liquid from the can of white beans, the tamari, nutritional yeast, and the dried spices. Let heat until it is starting to boil.

Add the white beans and a 1/2 cup of the veg broth.

Mash everything up in the pan a bit, and once it starts to boil, remove from the heat and toss it into a blender. Blend that up really well, and add back to the pan.

Put the other half cup of vegetable broth into the blender, give it a few pulses to clean the sides down, and add that to the pan.

Reduce heat to low, and let simmer until it is ready to be served.

This has been a huge year for the impact we have been able to make through the Open Market Program, Community Dinners, and the examples we have set biking to pop ups, getting creative with local, in season produce from the soil stewards we have partnered with, and all the new connections and members of this community we have welcomed into the circle as they have stood up in solidarity with our shared purpose and mission.

So many lives were impacted, so much information and important resources were shared, and so many incredible conversations were had at every Open Market, Community Dinner, and pop-up. All of you showing up, we love you. Community begins when we show up, when we participate, and when we come together over a plate of food.

There is still so much to do. This time of year is complicated for me. It’s not very easy to look back and appreciate the successes that were had, when there is still so much need.

Well, we’ll hit it that much harder and with even greater confidence in our convictions in 2023.

2nd Tuesday Community Dinner is also at 1697 Lafond on Tuesday, Jan. 10th from 11am-7pm. It will continue to benefit the Zion Lutheran Church Food Justice Initiatives.
